Chancho serves up authentic Mexican food in downtown Vancouver

Chancho is the latest Mexican restaurant to open in downtown Vancouver, and you’d be hard-pressed to find a more authentic meal this side of the border.

The small restaurant at 1206 Seymour Street near Davie makes its own corn tortillas in-house on a machine imported from Mexico.

There are three different kinds of pork on offer, maciza (pork shoulder and leg), panza (pork belly), and campechano (a mix of pork shoulder/leg and belly). The meals come with the meat, tortillas and toppings – you assemble them how you wish. All meals are served with pickled red cabbage, pinto beans, salsa and limes. For vegetarians, there are also several options available.

The pork is tender, succulent and perfectly seasoned. The salsas are perfect, and the tortillas are miles ahead in taste of anything purchased at a store.

The restaurant opens at 11:30 a.m. Monday to Saturday, and closes when they run out of food, which usually happens around 5 p.m. Eat-in or take out. And in case you’re wondering, Chancho means pig en Español. Fitting for what they are serving, and also for how you’ll likely feel after ‘pigging out’ here.
